Tai Ata Koro oysters are giants. This is because they are hidden in the darkest parts of the Marlborough Sounds—waters which are renowned as the perfect environment for shellfish.
Koro is the Māori word for ‘grandfather’, ‘cove’ and ‘desire’—each a fitting descriptor of different facets of these grand molluscs. They are hand-gathered from the wild, as they once were long ago.
These oysters are selected for their immense size and given the grade of Koro. They give the chef the challenge of creating culinary memories for their diners that will never be forgotten.
